Taco Salad
Most excellent in the summer and nicely complemented by margaritas or chips and guacamole.
Ingredients
- 2 C sour cream
- 4 ripe avocadoes
- 1 tsp garlic powder
- salt
- 1 lb ground beef
- 1 package taco seasoning
- 1 1/2 heads of lettuce (chopped/torn for for a salad)
- 1 medium onion, diced
- 2 tomatoes, diced
- 1 can kidney beans, drained and rinsed
- 8-16 oz. shredded cheddar cheese
- bag of Doritos, classic
- your favorite salsa
Directions
Cut up 3 ripe avocados and mash with 2 cups of sour cream and a teaspoon of garlic powder. Add a bit of salt if you like. Set in the fridge until ready to use. Dip chips in it and eat some cause it is really good….
Brown 1 lb. of ground beef and add a package of taco seasoning (follow directions on package)
In a big bowl, toss 1 ˝ heads of lettuce, medium chopped onion, 2 chopped tomatoes, 1 can of drained and rinsed kidney beans, shredded cheddar cheese and one or two chopped avocados.
Add the cooled meat and toss again… add the guacamole dressing and half a bag of crushed Doritos… toss again and serve with salsa and rest of Doritos.
I recommend refrigerating this dish and letting the flavors mingle for a while. I usually serve it slightly cool with fresh Doritos on the side.
