Beef and Noodles
A great comfort food. Well worth the time investment.
- 3 Tbls Vegetable oil
- 2-3 lbs Beef - shoulder roast, bottom round roast, etc.
- Water
- 3 Tbls Parsley
- 1/4 C minced/diced onion
- Salt and pepper
- 1-1/2 lbs egg, kluski, or whatever noodles you like
- 2 Tbls milk
- 1/4 white onion
As I received it...
This is easy… Put about 3 tablespoons of oil in a pan and heat it up….Add some beef…. I like to use a shoulder roast but you can really use anything. Brown the roast on both sides… brown it real well… then cover it with just enough water to cover the top. Add 3 tablespoons of parsley and minced onions… as much as you like. Salt and pepper.
Cover and simmer for a couple of hours until the meat is real tender…. Then pull the meat out to cool and add a pound of noodles of your choice. Add water if needed but not too much because the noodles will cook down. Trim the fat and cut the meat and add it back in with the noodles. Simmer until noodles are done stirring often. I like to add some milk towards the end to give it a creamier texture. Serve over mashed potatoes with raw onion.
My Notes
You can use round roast - it's cheap. Because that meat is so tough, make sure you let it simmer for at least two hours. When you take it out, leave the water in the pot! Let the meat rest for a few minutes - five to ten - on the cutting board. Add the noodles. I usually eyeball this - add a pound or two as the liquid allows. If you need more, add some more water. Try not to add too much water, though, because the water that's in there is a delicious beef broth that will flavor your noodles. Diluting it will kill some of that deliciousness. When it's cooled a bit, begin shredding the meat with a fork or tongs. Add the shredded meat to the noodles and let the liquid cook down until it's almost gone.
I prefer this as it is, but Dad likes to serve it over mashed potatoes. The 1/4 onion should be cut into bite-sized pieces (sort of like a small chip) and eaten raw. I put these on the side of a bowl or plate of beef and noodles. Because the main dish is so starchy and somewhat bland, the onion is a burst of flavor. It sounds gross, but I've successfully converted my wife and others.
