Dad's Beef and Vegetable Soup

Probably my favorite single food.. best served with the drop noodles and a side of warm bread.

Cut the meat into bite size chunks trimming the fat and ugly stuff off

Brown the meat in a large pan with a little oil… heat the pan and oil and add the meat a few pieces at a time

Then add the meat with the bone… if you can get a soup bone great but if not, then you can get some short ribs or anything that has a bone. You will pick the bone out later and make sure the marrow stays in the soup.

Once the meat is browned… you don't have to cook it all the way through…..add water enough to cover it at least tripled or more.

Bring to a boil and then simmer for an hour or two… depending on which cut of meat you use. You want it tender.

I usually add a can of beef broth or consomme during the simmer.

Halfway through the simmer time I add the spices…. Salt, pepper, basil, thyme, marjoram, and little parsley.

I usually add about a teaspoon or two of each depending on how much soup I am making… I never measure this…

Then I add the secret ingredient… a box of Knorr vegetable soup mix.

Then add the cut up veggies that you prepared while the beef was simmering. I like to use carrots, leeks, potatoes, turnips, parsnips, celery (with the leaves) and onion.

Cook for about 30-60 minutes till the veggies are tender.

You will have to bring it back to a boil after adding the veggies… then lower the heat and simmer again….

Egg Drop Noodles

Then in a bowl put 2 cups of flour and beat 3 eggs into it … again I don't measure this… but using a fork, stir the eggs into the flour and get it all mixed up until it is gooey but doesn't drip when you dip in a spoon and pull it out.. you want it about the same consistency as brownie mix before you cook it … then bring the soup back to a low boil and drop spoonfuls of the egg batter into it. Cover the soup and simmer for about 5 minutes more until the drop noodles are done.. . that is it.
